1 c. butter softened
2 c. sugar
1 tsp. vanilla
1 1/2 tsp. orange extract (I add rind (zest) from 2 oranges)
3 eggs
3 1/2 c. flour
1 tsp. salt
1/2 c. flaked coconut
1 tsp. baking powder
Directions:
Directions:
Combine all ingredients except flour and coconut. Beat 1-2 minutes. By hand, stir in flour and coconut. Drop dough by rounded teaspoonfuls onto greased cookie sheets. Bake 350°F for 6-8 minutes or until edges are lightly browned. I often spread a little confectioner’s sugar icing with orange rind added. Makes 4-5 dozen
