6-7 potatoes
1/2 c. butter
1 can of cream of chicken soup ( or you can use the dry, packaged soup and prepare as directed on package)
3 T. minced onion
1 1/2 c. grated cheese, cheddar or whatever you like
16 oz. sour cream
1 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
In a saucepan over medium heat, boil potatoes until tender, but not mushy. Let cool completely, then peel, grate and place in large mixing bowl. In a saucepan over medium heat, place butter, onion, soup, cheese, sour cream, salt and pepper and heat to hot, but not boiling. Pour over potatoes and mix well. Place in a greased casserole dish. Cover and chill overnight. Preheat oven to 350°F. Bake 1 hour.
