1 1/2 c. oil
2 c. sugar
2 c. flour
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking soda
4 eggs beaten
3 c. finely chopped carrots

Icing:
Cream 1/2 c. cream cheese
1/3 c. butter
1 tsp. vanilla
2 c. powdered sugar

Directions:
Mix all ingredients and add carrots. Bake at 350° F for 35 minutes. Cool and frost with icing.
