2 T olive oil
1 tsp. garlic
1/3 cup diced onion
1 jalapeno (seeded and shredded)

8 cups rich chicken stock
1/2 cup tomato juice
1T cumin
2T chopped cilantro
1 cup fresh diced tomato
2 T chili powder
2 tsp oregano

Directions:
Directions:
Saute first four ingredients until translucent.
Heat and simmer remainder of ingredients for 30 minutes total, adding sauteed mixture after the first 20 minutes.
Serve over corn tortillas or chips. Add 1-2 T mild cheese.

John's recipe is quite tasty and low calorie . . guess he ate too much on Thanksgiving in Costa Rica and now he's in the mood for some of his great soup. .. don't forget to add in a run and a swim and you might actually lose weight!
