4 turkey wings (about 3 pounds)
2 onions, peeled and quartered
1 cup water
8 cups chicken broth
3/4 cup chopped carrots
1/2 tsp dried thyme
3/4 cup all purpose flour
2 Tbsp butter
Pepper

Directions:
Directions:
1. Heat oven to 400 degrees. Have ready a large roasting pan.
2. Arrange wings in single layer, scatter onions over top. Roast 1 1/4 hour or until wings are brown.
3. Put wings and onions in stock pot. Add water to roasting pan and scrape any brown bits on bottom. Add to pot along with the carrots and thyme and 6 cups broth. Simmer 1 1/2 hours.
4. Strain into 3 qt. sauce pan.
5. Whisk flour into 2 cups of remaining broth. until blended and smooth.
6. Bring broth to gentle boil. Whisk in flour broth mixture. and boil 3 to 4 minutes. Add butter
7. Refrigerate up to one week or freeze up to 6 months.
