2 chickens, cut up, approximately 2 1/2 lbs. each
1 - 4 oz can sliced mushrooms
1- 8oz can tomato sauce
1 cup celery, diagonally sliced
1 cup onions, finely chopped
2 tsp salt
1 1/2 tsp salt
1 1/2 tsp Italian seasonings
1/4 tsp pepper

Directions:
Directions:
Place chicken in baking pan. Brown in oven at 500 F. for 15 minutes, turning once. Reduce oven temperature to 350 F.
Transfer chicken and pan drippings to oven proof casserole. In small saucepan, combine mushrooms, tomato sauce, celery, onion, salt, Italian seasoning and pepper; bring to a boil. Reduce heat and simmer for 10 minutes, pour over chicken. Cover and bake at 350 for 1 hour or until chicken is tender.
Serves 6-8, generous servings
