Ingredients:
Ingredients:
1 1/2 lb. ground beef or turkey
1/2 cup chopped onion
1/2 cup chopped green pepper
1 pkg. chili seasoning mix
1 lb. can tomatoes
1 - 2 1/4 oz. small can black pitted olives, sliced
1 12 oz can corn or frozen corn
1 cup yellow cornmeal
1 1/2 cup cold water
1 cup grated cheddar cheese

Directions:
Directions:
Brown meat until cooked and crumbly, drain all fat.
Add onion, green pepper, chili seasoning mix and tomatoes, mix well.
Bring to boil, reduce heat and simmer uncovered 10 minutes.
Add corn and olives.
Meanwhile, combine cornmeal and water and a small pinch of salt in a small saucepan, bring to a boil and boil until thick (just a few minutes).
Spread meat mixture into a casserole dish, spoon cornmeal mix over. If you leave the cornmeal to sit at all it will harden, so try to time it so that you are ready to use the cornmeal mix as soon as it is thick.
Bake at 350º for 40 minutes. Top with grated cheese, return to oven and cook another 5 minutes until cheese is bubbly.

Personal Notes:
This is from The Flavor of Franklin Cookbook, put together by teachers where Ricky went to elementary school. Ricky's babysitter Julie used to make it when all three kids were in school and Eliot and I had to work late. It's filling, colorful and delicious!
