Ingredients: 1/4 cup olive oil 2 cups chopped onions 2 1/2 cups chopped vegetables (see below) 2 TB. chili powder, preferably Chile New Mexico Molido (comes packaged in the Mexican section of the grocery store) 6 garlic cloves, chopped 2 tsp. dried oregano 1 1/2 tsp. ground cumin 3 16 oz. cans black beans, drained, 1/2 cup liquid reserved 1 16 oz. can tomato sauce
chopped fresh cilantro sour cream or avocado grated cheese chopped green onions

Directions:Heat oil in heavy large pot, add onions, mixed vegetables and garlic, saute until onions and vegetables are soft, about 15 minutes. Mix in chili powder, oregano, cumin (and add a little cayenne if you want it hot). Stir two minutes. Add beans and 1/2 cup reserved bean liquid, and tomato sauce. Bring to a boil, and simmer until flavors blend and chili thickens, 15-20 minutes. Stirr occasionally. Season to taste with salt and pepper.
Ladle chili into bowls, pass chopped onions, cilantro, avocado, cheese and sour cream separately. |

Notes: For vegetables, include a mix of green and red pepper, celery, carrots. Small cubes of potato or yam, winter squash, or any other vegetables that can keep their shape are good. This is a hearty dish, no one will miss the meat! But if you want, you can add ground turkey or hamburger, sausage or any leftover meat in small dice.
