1 pound jumbo shells
Olive oil
1/2 pound pancetta
2 pounds spinach, washed and drained
15 oz whole milk ricotta
1 cup asiago
1/2 tsp pepper
1/2 tsp nutmeg
1 Tbsp butter
1 clove minced garlic
1 cup cream
2 cups asiago cheese
1/4 cup fresh parsley
1/4 tsp. pepper

Directions:
Directions:
Cook shells according to directions. Saute pancetta in olive oil. Add pancetta to a mixed spinach, ricotta, asiago, pepper and nutmeg.

Put a large spoonful of mix in each shell.

Sauce:
Saute garlic in butter. Cook one minute in saucepan and then add cream. Turn to low and add the last three ingredients.

Top shells with some asiago and cook 25 minutes at 350º. Drizzle some sauce on shells before cooking and more when it's done. Fits into two 8x8 pans.
