3 large potatoes
1 medium-sized onion
2 eggs
1/2 cup all purpose flour
1 teaspoon salt
Dash ground white pepper

Directions:
Directions:
1. Shred the potatoes and the onion in the food processor;
2. Mix eggs by hand, and mix them into the shredded potatoes and onion, along with the other ingredients;
3. Fry the mixture, spoonful by spoonful, in hot oil (canola, preferably).
4. Serve immediately while hot.

My grandparents made this recipe frequently. Although they have it in their recipe book, I presume this was a recipe that my maternal grandmother made and my grandmother learned from her, especially since it is of German origin. My grandmother, and now my mother, serves these pancakes with applesauce on the side, and along with a dish of either smoked or regular porkchops.
