1 lb. ground beef
½ cup chopped onions
½ tsp. salt
¼ tsp. pepper
4 oz. can green chiles
1½ cup shredded sharp Cheddar cheese

Topping:
4 oz. can green chiles
4 eggs, beaten
1½ cup milk
¼ cup flour
½ tsp. salt
Hot pepper sauce

Chile Mixture:
Brown 1 lb. ground beef and ½ cup chopped onions in a skillet. Drain off fat. Sprinkle meat with ½ tsp. salt and ¼ tsp. pepper. Place one 4 oz. can green chiles, cut in half crosswise and seeded, in a 10x6x1½ inch baking dish. Sprinkle with 1½ cups shredded sharp cheddar cheese. Top with meat.

Topping:
Arrange one 4 oz. can green chiles, cut in half crosswise and seeded, over meat. Combine 4 beaten eggs, 1½ cups milk, ¼ cup all purpose flour, ½ tsp. salt, several dashes bottled hot pepper sauce and dash of pepper. Beat until smooth. Pour over top.

Bake at 350º for 45 to 50 minutes. Cool 5 minutes.

Yield: 6 servings
