1 lb. potatoes
2 lg. green peppers, sliced into strips
2 lg. red peppers, sliced into strips
1 small red onion
2 cans sliced black olives
6 oz. feta cheese
1 bottle Vinaigrette Salad Dressing, your choice
season with oregano, cilantro, and parsley

Directions:
Directions:
Soft boil potatoes, peel, then slice 1/2 inch thick and place into large serving bowl. Boil pepper slices for 8-10 minutes. Slice onion into thin strips and add to bowl. Drain peppers and black olives and add to bowl. Season to taste and add dressing. Mix well, coating all ingredients. Top with feta cheese and serve warm.

Even though this says it's a salad, it's more of a side dish and should be served while still warm.
