4 eggs separated
1 1/2 cup vegetable oil
2 cup sugar
1 1/2 cup grated carrots
2 1/2 cups sifted flour
2 1/2 tsp cinnamon
1 1/2 tsp baking soda
1 tsp salt
1/3 cup crushed pineapple
1 tsp hot water

Directions:
Directions:
In large bowl, beat egg yolks. Add 1 tsp hot water, oil sugar and carrots. Mix flour, soda, cinnamon and salt together and add to carrot mixture. Add crushed pineapple, mix well. Fold in stiffly beaten egg whites. Pour into 13x9 or tube pan. Bake at 350º for 45 minutes. Cool and top with frosting.
