1 c. plus 2 T. cake flour
3/4 c. sugar
1 3/4 c. egg whites
1 1/2 tsp. cream of tartar
1/4 tsp. salt
1 1/2 tsp. vanilla
1 c. sugar

Directions:
Directions:
Sift flour and 3/4 c. sugar 4 times. Beat egg whites with cream of tartar, salt and vanilla till stiff enough to form peaks but still moist and glossy. Add 1 c. sugar slowly. Beat well, do not under beat. Sift flour over egg white mixture and fold in a little at a time. Place batter in tube pan and bake 350 degrees for 35 to 40 minutes. Place upside down on funnel to cool. When completely cool, run spatula around sides and remove from pan onto serving plate.
