1/2 c. sugar
1/4 c. all-purpose flour
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
6 apples,tart, such as Granny Smith, peeled & cored & sliced thin
2 apples, sweet, such as Golden Delicious,peeled & cored & sliced thin
1 Tbs. lemon juice
2 Tbs. honey
1 Tbs. butter, cut into chips
1 egg white, lightly beaten

Place crust in greased, 9 inch pie plate. Reserve dough for pie top, folding and wrapping in waxed paper. Refrigerate pie crust and top while preparing filling. Preheat oven to 375º. In a very large bowl, combine brown sugar, flour, cinnamon, nutmeg and salt. Gently stir in the apples and lemon juice. Spoon filling into pie crust. Drizzle with honey and dot with butter. Roll out pastry for top and place on pie, trim and flute edges. Cut out vents with a knife or decorative cutter. Brush egg white over top of pastry. Bake 55-60 minutes, or until filling is bubbly and crust is golden. Serve warm or at room temperature, as desired.

This pie will seem to be too full, but the apples will shrink in baking. I recommend covering the edges of the crust with foil or an edge cover made for this purpose to avoid the edges becoming over-done.
