2 cups sifted flour
1 T. Baking Powder
1 tsp baking soda
2 tsp salt
3 T. Sugar
2 eggs, beaten
2 1/4 cups sour milk or buttermilk
6 t. melted shortening or oil

Directions:
Directions:
Sift together flour, baking powder, baking soda, salt, and sugar.
Beat eggs in mixing bowl. Add sour milk, shortening and flour mixture. Stir until blended.
Heat griddle slowly until moderately hot. Test temperature by sprinkling a few drops of water on the griddle. When drops stay round and bounce about, the griddle is hot.
Grease griddle very lightly before each batch. Ladle or pour on about 1/4 cup batter for each pancake.. Bake until top side is full of bubbles that begin to break and edges are dry; turn; and brown on other side.
Makes 2 1/2 dozen 4-5" cakes or 1 dozen 6-7" cakes.
Note: to use sweet milk use 5 tsp baking powder and no baking soda.
As a special treat mom would cut bacon in approximately inch long pieces, Fry it a little then put the bacon in the second side of the pancake. It would fry/ cook as the pancake cooked. She would also cut apples in pieces and put that in the pancake as she did with the bacon. It was her way stretching the bacon she had and giving us each some and giving us a treat in the process. We would have syrup, butter, or applesauce to put on top.
