Make 1 day ahead

4 Bosc Pears, Ripe but not mushy
1 ½ C Water
1 ½ C Red Wine
¾ C Sugar
1 Lemon, sliced
1 Cinnamon stick

Directions:
Directions:
Peel the pears, use a melon scoop to remove the core from the blossom end (big end) but leave the stem.

In a medium saucepan, bring the water, wine and sugar to a boil. Turn the heat to medium – low and add the sliced lemon, cinnamon stick and pears (standing). Cover and simmer until the pears are very tender, at least 20 minutes.

Remove the pears to a bowl and refrigerate overnight. Continue to cook the sauce over medium – high heat until it is reduced and thickened. Chill over night.

Serve pears chilled and sliced thinly, fan decoratively on a plate and drizzle the syrup over the top.
