Make 1 day ahead

4 Bosc Pears, Ripe but not mushy
1 C Water
1 C Red Wine
C Sugar
1 Lemon, sliced
1 Cinnamon stick

Directions:
Directions:
Peel the pears, use a melon scoop to remove the core from the blossom end (big end) but leave the stem.

In a medium saucepan, bring the water, wine and sugar to a boil. Turn the heat to medium low and add the sliced lemon, cinnamon stick and pears (standing). Cover and simmer until the pears are very tender, at least 20 minutes.

Remove the pears to a bowl and refrigerate overnight. Continue to cook the sauce over medium high heat until it is reduced and thickened. Chill over night.

Serve pears chilled and sliced thinly, fan decoratively on a plate and drizzle the syrup over the top.
