1 lb or less frozen, raw shrimp or
Cooked shrimp from shrimp ring
2 1/2 C medium grain white rice
2 small tomatoes
½ large green pepper
2 cloves garlic
2 tsp chicken flavouring – crystals, cubes or liquid
1/3 C fish sauce
½ C olive oil
¾ C cooked frozen peas
2 T lemon juice
1 tsp yellow food colouring or a pinch of Spanish saffron

Do ahead: Cook peas until just done and drain. Sauté raw shrimp until pink or heat cooked shrimp only till warm.

Pre-heat oven to 350 and start tea kettle of water to boil
Cut chicken into bite-sized pieces, cut tomatoes into medium pieces.
Dice green pepper, and mince garlic. In paella pan, large frying pan or wok, heat 1/4 C olive oil over high heat. Then add chicken, tomato, pepper and garlic. Sauté for 2 mins., then add rice. Mix and turn off heat. Put mixture into large casserole dish or leave in paella pan. Add remaining ingredients including ¼ C olive oil. Do not add shrimp and peas. Pour in two cups hot water. Bake mixture uncovered for 30 t0 40 mins. Check for flavour stirring once or twice. Add more water if too dry and rice is not done. Do not over bake—rice should be firm and tender but not mushy. When rice is done, mix in peas and shrimp or place shrimp

Note: Buy a non-stick paella pan—mixture can then be put directly into oven. Result: paella looks very authentic and Spanish!
