Springerle Cookies Recipe

4 eggs
2 c. sugar
4 drops anise oil
4 1/2 c. cake flour, sifted

Beat eggs until thick. Gradually add sugar, beating well after each addition. When all sugar has been added, beat 15 minutes with an electric mixer or 30 minutes by hand. Blend in anise oil. Fold cake flour in lightly. Using a Springerle cookie rolling pin, roll the dough out to about 1/2 inch think and cut into squares. Let dry overnight in a cool place. Bake in 300 degree oven for 30 minutes. Store up to a month in covered jar with an orange or apple.

Editor's note: Springerle cookie rolling pins have designs on them that mark the dough and print a design on the cookies. The baked cookies are rather hard, which is why they are stored with fruit.
