1 (3 oz.) pkg. lemon Jell-O
1 c. boiling water
1 (8 oz.) pkg. cream cheese
1/2 c. sugar
1 tsp. vanilla
1 (12 oz.) can Milnot (see Editor's Note below)
3 c. graham cracker crumbs
1/2 c. margarine, melted

Directions:
Dissolve Jell-O in boiling water, chill until slightly thickened. Cream together cream cheese, sugar, and vanilla. Add Jell-O, blend well. Fold in stiffly beaten Milnot (must be very cold - I put in freezer about 1 hour).
Mix graham cracker crumbs and melted margarine; pack 2/3 in bottom of a 13x9x2 pan. Add cream cheese mixture, sprinkle remaining crumbs on top. Chill several hours.

Editor's note: Milnot is a brand of evaporated soy milk. It can be purchased through the Smucker's Online Store (http://onlinestore.smucker.com). I talked with a representative who said that evaporated soy milk has a richer, stronger, more custard-like taste than regular evaporated milk.
