1 lb. dried Pinto Beans, cleaned
5 c. Water
1 Med. Onion, diced
Lg. clove Garlic, diced
1/2 to 1 c. Bacon Drippings or Butter
Cheese
Green Onion

Directions:
Directions:
Combine beans with water, onion and garlic in a large sauce pot. Bring to boil, cover and remove from heat for 2 hours. Return to heat, bring to a boil, and simmer slowly until beans are very tender (about 3 hours). Mash beans with a potato masher and add fat. Mix well; continue cooking, stirring frequently, until beans are thickened and fat is absorbed. Salt to taste. Serve with cheese and green onions sprinkled on top.
