2 T olive oil
3/4 lb. andudoville susage
3/4 lb. smoked sausage
1 lb. cocktail shrimp
1 pkg dried/ reconstituted tomatoes
1/2 C sassafras tea
1 of each green, yellow, red peppers, sliced
2 small onion
10 oz. frozen okra
3 cloves minced garlic
1 T Creole or Cajun spice.

Fry meat in olive oil. Add 1 cup of water and remaining ingredients. ( As the okra cooks, the mixture wil thicken.)

We substitute some ingredients: Kielbasa for smoked sausage, and Jimmy Dean Maple sausage for andudoville sausage. We also like to use red onions because of their color and the way they carmelize. And a "bam" of Emeril's seasoning if you got it handy!
