1 lb ground Pork Sausage or Italian Turkey Sausage
32 oz Carton Beef Broth free of msg or autolyzed
28 oz Can Diced Tomatoes (not tomatoe sauce)
14.5 oz Can diced Tomatoes with Italian Seasoning
2 C Water
9-10 oz Bag of Fresh Spinach
1/3 C or 3-4 ounces of Sliced Olives
1 T Basil or 1/4 C Fresh Basil
2 tsp Oregano or 2 T of Fresh Oregano
3 Garlic Cloves minced
6 oz of Tinkyada Dry Fusilli or Elbow Noodles
Opt: Grated Parmesan to top bowls of soup

Auna’s Opt: add a handful of whole cherry tomatoes and fresh rosemary half a cup

Crumble or cut up sausage into a fry pan. Brown and drain off fat. In large soup pan combine browned sausage and all other ingredients except the dry noodles. Bring to boil then reduce heat, and simmer covered 20 mins. Taste. If broth is too strong or there is not enough broth, add additional water. Return to a calm boil, remove lid and add noodles. Boil till noodles are tender. Turn off heat and let sit 5 mins more for noodles to plump. Taste. Top with grated cheese if desired.
