4 Sirloin Strip steaks, cut in 1/2" thick slices
Salt and ground pepper to taste
1 tsp. dry mustard
4 tbsp. butter
3 tbsp. lemon juice
2 tsp. snipped chives
1 tsp. Worchestershire sauce

Directions:
Directions:
With meat mallet, pound steak to 1/3" thickness.
Sprinkle 1 side with salt, pepper and 1/8 dry mustard; pound into meat, repeat other side.

Melt butter in skillet, add meat, cook for about
3 minutes on each side.
(longer if you like well done)

Transfer meat to chafing dish or serving plate.

Boil lemon juice, chives and worchestershire sauce together, pour over meat.
(optional add 1/4 Dry Sherry cooking wine)

Garnish with cooked fluted mushrooms (canned or fresh)
