1 medium spaghetti squash cut in half
Salt & pepper (course ground)
Jumbo shrimp (peeled and deveined)
Extra virgin olive oil
1 Lemon
Fresh basil

Directions:
Directions:
Preheat oven to 375. Season cut squash with salt and pepper and place it cut side down in baking dish. Add 1/2 cup water and roast until tender. About 45 minutes. In a baggie, toss shrimp with a drizzle of olive oil, salt & pepper. Grill, roast or griddle until pink. About 8 minutes or less.
Scoop seeds from squash and scrape spaghetti flesh into a large bowl. Add shrimp, juice from roasting pan, drizzle of olive oil, a squeeze of lemon, salt and pepper and basil. Toss and serve.
