Albondigas (Meatballs):
1 lb. Ground Beef
1 Egg
1/4 c. Uncooked Long Grain Rice
1 tsp. Garlic Salt
1 tsp. Oregano
1/2 tsp. Pepper
1/2 tsp. Ground Cumin
2 tbsp. Chopped Fresh Cilantro

Mix all ingredients together and form into small balls

Soup:
1 Can Diced Tomatoes with Garlic/Basil/Oregano
1 Small Can Diced Green Chili
1 Bunch Green Onions Coarsely Chopped
1 Cube Beef Bouillon
2 Potatoes, cubed
4 Carrots in pieces
2 Celery Stalks in pieces
1 Chayote, cubed
2 Zucchini, cubed

Directions:
Directions:
Saute green chili and green onion in very small amount of oil. Add canned tomatoes, undrained, and 4 cups of water (add more if needed). Bring to a boil. Add beef bouillon. Lower flame to simmer and add meatballs and vegetables. Simmer until meatballs and vegetables are cooked - about 1 hour.

Add spices to taste and vegetables according to your liking. Garnish soup with chopped cilantro. Serve with hot corn tortillas, longhorn cheese slices and canned green chili slices. This is really good the next day! It can be frozen also.
