Ingredients:  
1 whole Chicken
6 Qts Water
1 bag of pasta (any kind)
4 Tbsp. Italian Seasoning
2 Tbsp. salt
1 Tbsp. Pepper (to taste)
1/4 cup grated ginger root
4 cloves minced garlic(minced)
1 bulb anise (chopped)
1 cup mushrooms (chopped)
1 large yellow onion (minced)
3 large jalapenos diced (seeded for less heat)
1 can lite coconut milk
1 cup chopped carrots
1 cup chopped zucchini
1 cup chopped butternut squash

Directions:
Directions:
cut chicken in half and skin
add to water & bring to a boil
add italian seasoning, salt, pepper (boil for 45 min.)
remove chicken from stock, debone & shred chicken
strain chicken stock thru cheese cloth or gold coffee filter and return to soup pot.
add coconut milk & shredded chicken, heat til simmer
saute onion & mushrooms til brown
add garlic, ginger, anise & jalapenos
combine w/ soup & let simmer for 1 hour
20 minutes before serving add remaining vegies & pasta
