Red, yellow or orange pepper (1 to 2 - thinly sliced)
1 to 2 jars marinated artichoke hearts - sliced - save juice
black pitted Calamata olives - sliced in halves
feta cheese crumbled - amount to taste
Zucchini - peeled, thinly sliced in quarters (saute gently in olive oil - till just tender - don't overcook)
Garlic - diced
Olive oil
Parmesan Cheese
1 package Pasta - I like Rotini - works also with Spaghetti

Cook pasta "al dente"
Add all veggies, olives, and feta cheese
Add olive oil, some of the marinade from the artichoke
Season to taste (you can also add some oregano or fresh basil)
Add Parmesan cheese and toss

Amounts and ingredients in this recipe are really to your personal taste. You can add just about anything you want (roasted or sun dried tomatoes are great, grape tomatoes, olive tapenade etc. - use your imagination). The flavours are best if quite pungent.

This recipe works great hot or cold. Let me know if you come up with any other interesting ingredients! I find adding the artichoke marinade gives a nice flavour - you could also add wine or balsamic vinegar.
