2 Leeks - white part only - quarter and thinly slice
1 Small package of smoked salmon - cut into bite sized pieces
1 ripe avocado - cut into small pieces
butter lettuce
oil
wine vinegar
Dijon mustard
salt and freshly ground black pepper

Directions:
Directions:
Steam the leeks until tender
Mix the leeks, salmon and avocado together gently
Mix 3 parts oil (use a mild flavoured oil - not olive), to 1 part vinegar, 1 tsp Dijon mustard and salt and pepper
Pour vinaigrette over the salmon mixture
Place a piece of butter lettuce on a salad plate.
Spoon some of the salmon mixture on the lettuce.
Serve as an appetizer or 1st course.

I don't use any herbs in the vinaigrette as I find the flavours of the salmon and avocado come through better with the more simple dressing. You can cut down on the mustard to taste.
