1/2 tsp thyme
1 large onion, diced
1 clove garlic, minced
1/2 cup green pepper, diced
2 Tbsp flour
1 lb ground sausage (or summer sausage)
3 cups seafood (shrimp, crawfish) (optional)
5 cups canned tomatoes
2 Tbsp parsley
4 cups cooked rice
1 tsp salt
1 beef bouillon cube
1/2 cup celery diced
1 cup chicken

Directions:
Directions:
Saute onions, garlic, green pepper, sausage, celery, in a bit of oil until tender. Do not brown this. Add remaining ingredients except rice and seafood. Simmer 30 min. Add seafood. Simmer 10 minutes. Add rice and serve. (To adjust the heat, add cayenne.)

This is a favorite in our house. It makes a bunch and is great to make ahead. You can adjust the moisture with some chicken broth if needed. Great for company. If you don't do seafood, add more sausage and chicken.
