Forest Mushroom Soup Recipe

8oz sliced fresh mushrooms
1 1/2 C shiitake mushrooms
7 oz oyster mushrooms
1 C finely chopped onion
1 clove minced garlic
3 TBSP Butter
1/2 C dry white wine
3 TBSP flour
4 C Chicken Broth
1 tsp salt
1/4 tsp pepper
1 cup whipping cream

Saute garlic and onion in butter until almost tender. Add wine and simmer 3 minutes or until almost evaporated. Combine flour and 1/2 cup of broth, stirring until smooth. Add to soup. Stir in remaining broth, salt and pepper. Simmer 10 minutes. Stir in cream, return to a boil and simmer 1 minute and remove from heat.
