8 c. low-sodium chicken broth
3 celery ribs, sliced
1 small onion, chopped
salt and pepper to taste
2 c. cubed cooked chicken
1 c. uncooked long grain rice

Directions:
Directions:
1) In large saucepan, combine broth, celery, onion, salt and pepper. Bring to boil. Reduce heat, cover and simmer 10 minutes.
2) Add cooked chicken and rice, bring to boil. Reduce heat. Cover and simmer 20-25 minutes or until rice is tender.
