2 chicken breast halves, cut in bite-sized pieces
1 egg white, lightly beaten
4 tsp. cornstarch, divided
4 tsp. soy sauce, divided
1 T. cold water
1 c. cashews
2 T. vegetable oil
1 small onion, chopped
1 small green bell pepper, cut in 3/4 inch strips
1 (8oz.) can sliced water chestnuts
1/4 c. chicken broth

Combine chicken, egg white, 1 tsp. cornstarch and 1 tsp. soy sauce. chill, covered, for 20 minutes. Combine remaining cornstarch, soy sauce and water; set aside. Stir-fry cashews in oil until lightly browned; remove and drain. Stir-fry chicken until chicken turns white; remove and drain. Stir-fry onion. Add chicken, pepper, water chestnuts and chicken broth to onion. Bring to a boil. Stir in cornstarch mixture and cook just until thickened. Add cashews. Serve over rice.
