2 lbs. cleaned calamari
1 c. flour
1 tsp. salt
Freshly ground pepper
Oil for frying
Lemon wedges

Rinse the calamari inside and out. Drain. Cut bodies crosswise into 1/2" rings. Cut the tentacles in half through the base. Pat dry.

Spread the flour on a sheet of wax paper and season with salt and pepper to taste.

Heat oil until a small piece of calamari sizzles and rises to the surface. When temperature is reached, lightly roll a few pieces of calamari in the flour mixture. Shake off excess and slip the pieces into the oil and cook until golden, about 3 minutes.

Serve hot with lemon wedges.
