2 (17-ounce) cans unpeeled apricot halves
3 tbls firmly packed dark brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground ginger
3 tbls butter
7 round crackers

Directions:
Directions:
Drain apricots and reserve 1/3 cup juice; remove any seeds from apricots. Combine sugar, cinnamon, and ginger. Butter a round 1 1/2 quart casserole. Arrange a layer of one-half apricots in bottom of casserole, sprinkle with one-half the spice mixture and dot with butter. Repeat the process so that you have two layers or more. Add reserved 1/3 cup apricot juice. You want just enough to moisten fruit but not make it runny. Crumble crackers over the top and dot with remaining butter. Bake in a preheated 375º oven for 40 to 45 minutes. Yield: 4 to 5 servings.
