3/4 c. shelled pine nuts
3 tbsp. unsalted butter
2 medium shallots, finely chopped
1 c. heavy cream
1/2 lb. fresh goat cheese, cut into chunks
Pinch of nutmeg
1 lb. smoked chicken breast, skinned and cut crosswise into 1/4" wide strips
3 tbsp. chopped fresh chives

Spread the pine nuts on a baking sheet and toast them in a 450 oven until golden brown, about 10 minutes.

Meanwhile, in medium saucepan, melt butter over moderate heat. Add the shallots and saute until tender, about 2 to 3 minutes. Add the cream and bring it to a boil. Add the goat cheese and nutmeg. Reduce the heat and simmer, stirring continuously until the cheese just melts.

Stir in the chicken pieces and simmer 5 minutes more. Remove and sprinkle with pine nuts and chives.

This is fantastic! Substitute any white cheese for the goat cheese. I use Gorgonzola. You can also substitute smoked turkey for the chicken.
