54 Ritz crackers
2 10-oz. pkgs. frozen chopped spinach, drained
10 oz. Muenster cheese, grated
2-1/2 c. milk
2 tbsp. dijon mustard
5 eggs
1/2 tsp. liquid hot pepper seasoning, if desired
2 cloves minced garlic

In 2-quart shallow baking pan, arrange 18 crackers in 3 long rows; combine spinach and 2 cups grated cheese, sprinkle half of the mixture over crackers. Repeat layers. Top with remaining crackers. Sprinkle with remaining cheese.

In medium bowl, beat together eggs, milk, mustard, and liquid hot pepper.

Pour evenly over mixture in baking dish. Refrigerate one hour. Bake at 350 for one hour, until puffed and golden. Cut into squares and serve.
