4 med. potatoes, peeled and quartered
1/2 c. skim milk or buttermilk
1/2 tsp salt
1 lb. extra-lean ground beef
1/4 c. dry bread crumbs
1/4 c. minced onions
1 egg white
1 tbsp ketchup
1 clove garlic, minced
1/4 tsp pepper
1 large tomato, thinly sliced
1/2 tsp dried oregano
1/4 c. shredded Swiss cheese
1/4 c. crumbled feta cheese
1/2 10oz. pkg. frozen spinach, thawed, squeezed dry and chopped

Cook potatoes in boiling water until tender (20 mins). Drain well, add milk and sale. Mash until smooth, set aside.

Preheat oven to 350ºF
In a large bowl, combine beef, bread crumbs, onions, egg white, ketchup, garlic, and pepper. Mix well. Pat mixture over bottom and up sides or a 9" pie plate.
Layer tomato slices over beef. Sprinkle with oregano. Spread Swiss and feta cheese over tomatoes. Top cheese with spinach. Spoon mashed potatoes over spinach. Spread evenly, leaving a 1' border around edges. (Meat & potatoes should not touch)
Bake 45 mins. Let cool 5 minutes. Enjoy!
