3 lbs. ground meat (15% fat)
1 lrg onion
1 or 2 cans Rotel Original 10 oz (start with just one can)
1 can tomato sauce medium size (14 1/2 oz)
1 can diced tomatoes lrg size (28 oz)
1 jar Green giant sliced mushroom, 4 1/2 oz (sometimes 2)
2 cans sliced black olives (4 oz each)
1 pkg. Lawry's Spaghetti Sauce Mix

For next layer:
4 to 5 cups sour cream
4 cups cottage cheese
2 lrg cans diced green chiles Ortega 7 -9 oz size
1 sm can Ortega diced Jalapenos 4 oz can

Next layer: 2 lbs Montery Jack Cheese
Next layer: Doritos plain corn chips)

Brown meat and onions together (I always season with Lawry's Garlic salt (coarse ground with parsley). I put a good amount sprinkled on generously. Drain off fat. Add the canned Rotel and tomato sauce and tomatoes...simmer together. Then add the mushrooms and black olives...simmer. Then add the Lawry's Mix and blend it in. Let it simmer until it thickens some and that's when I decide if I need to add the other can of Rotel...or sometimes just half of it is enough and sometimes it doesn't need any. I know this is crazy but I'm trying to cover every contingency! Then let it cook on lowest heat while you prepare the rest.

Now for the second mixture. Mix the sour cream, cottage cheese, diced green chiles and jalapeños if you prefer. Actually, first just mix the sour cream and cottage cheese and green chiles...cause it depends on how hot you like it if you put the whole can of jalapeños or just half a can. I have found that the "heat" in each can is always different...sometimes real hot and sometimes just nice. Then I use the whole can if it's nice. It's good to have a little "heat".

The last ingredients needed are simple. Just a ton of grated Monterey Jack (4 to 6 cups) cheese...we have tried buying the pre-grated and it is just not a good as when you buy the 2 lbs block and grate it yourself. (this is where Uncle gene takes part ) ho ho. Then the last thing you need is the large bag of Dorito Chips (Plain Yellow Corn) altho' you don't want to put too thick a layer of chips... just a reasonable amount and yes, I always buy "Doritos" brand, have tried the other brands and they don't work as well for this recipe...altho' that's just me... Uncle Gene says it doesn't matter, it is always good. but 'fidyldd', why mess with success??

You crush up the Doritos chips (leaving a few out to stick in the top, unbroken). Then you begin layers routine. I never grease the pan...just begin with the crushed Doritos...then spread with your meat sauce mixture (using half of everything) then cover that with the sour cream mixture and top with the grated cheese. Then repeat layers and end up on top with the grated cheese and stick about 4 to 6 chips into cheese and bake at 350º for 30 minutes or until it starts to bubble around the edges. It takes a very large baking pan or you can even use two. Whatever!! Just hope this makes sense. You just can't go wrong with it and everyone loves it..so good luck and have fun?

Mom's intro to this recipe when requested was as follows. "I hope I can make it make sense to you. I've made it so long now that I don't even have it written down anymore and it's just in my head and sometimes it varies....I know, I always hated it when my Grandma would give me an answer like that when I asked her for a recipe!! I'm sorry now for always getting so disgusted with her...guess it comes with old age! Horrors! "
