Grandma’s Healthy Waffles – Makes 4

Ingredients:
2 C Old Fashioned Oats
˝ C whole wheat flour
3 T sunflower seeds (optional)
2 1/3 C cold water
1 T salad oil
1 T sugar
˝ tsp salt
2 tsp vanilla
˝ tsp almond extract (optional)
1 tsp cinnamon

Stir to blend ingredients – mix should look “soupy.” Add a tablespoon or two of water if necessary. If too soupy, add 1 or 2 T flour. Oil spray hot waffle iron and spread one scant cup of mix on it. Repeat 3 times.
Note that these waffles take twice as long to bake as regular waffles.
