3/4 - 1lb talipia, flounder or any firm white fish fillet
1 egg (beaten w/ 1T milk)
3T wheat germ
2T Parmesan cheese
1T olive oil
1T butter
2T minced parsley
1t grated lemon zest

Directions:
Directions:
Soad fish in the egg wash for 30 minutes.
Mix wheat germ & parmesan.
Dip fish into wheat germ mixture to coat both sides.
Preheat oven to 375º
Heat oil & butter in a nonstick skillet w/ an ovenproof handle (or wrap handle in foil).
Lightly brown fish on both sides over medium heat.
Remove skillet to the oven and bake for 15 minutes or until fish is firm.
Garnish w/ parsley & lemon zest.
