1/2 to 1 c. of coarsely grated apple
1/4 c. sugar
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 egg
6 T. vegetable oil
1/2 c. water

Topping:
1/2 tsp. ground cinnamon
pinch of ground nutmeg
3 T. sugar

Directions:
Preheat oven to 400° F and grease 12 muffin cups thoroughly. Peel and core the apple; grate coarsely. Make spiced sugar by stirring the topping ingredients together; reserve. Stir the flour, sugar, baking powder, and salt together in a bowl. Mix the egg, oil, water, and grated apple together. Stir them all at once into the sifted dry ingredients, mixing just until all of the flour is moistened. Divide the dough among the muffin cups and sprinkle the tops of the muffins with the spiced sugar. Bake for about 15 minutes, until done.
