1 lb. dried black beans (2 1/2 c.)
ham bone or sausage
2 medium chopped onions (1 c.)
2 stalks chopped celery (1/2 c.)
2 carrots chopped (1/2 c.)
1/4 c. snipped parsley
1 T. Worcestershire sauce
1/2 tsp. dry mustard
2 whole bay leaves
3 whole cloves
Dash dried thyme leaves, crushed

Rinse beans; soak overnight in 6 c. cold water. OR bring beans & water to boiling; simmer 2 minutes and let stand 1 hour. Drain beans, discarding liquid,  Add next 10 ingredients and 7 c. of water.  Bring to boiling; reduce heat.  Simmer, covered, for 2-3 hours or until beans are very tender. You can also cook it in the crock pot. Remove ham and bone; cut any meat into small pieces.   Work soup, through sieve or put through a blender.  Add meat and serve.  Season with salt and pepper to taste.  May stir in a little water and heat through. To serve, garnish with hard-cooked egg slices and thin lemon slices. You may also add a dash of vinegar.
