4 tsp oil
1 tsp ground cumin
1/2 tsp salt
1 1/2 lb carrots
12 cloves garlic, peeled
4 red hot peppers, halved and seeded

Directions:
Directions:
In a bowl mix, oil, cumin and salt. Halve carrots lengthwise, cut into 2" chunks. Add to bowl with garlic. Mix well. Put into 9x13 pan, bake 400 for 20 min. Stir in hot peppers and bake until carrots are browned and tender, about another 20 min.

Don't be afraid of the amount of garlic, roasted garlic is wonderful!!
