4 large sweet potatoes
2 T each orange marmalade and butter
1 T brandy
1/2 tsp salt
chopped fresh parsley

Preheat oven to 425º Prick unpeeled sweet potatoes and place on cookie sheet. Bake until very tender, 45 min. to 1 1/4 hours, depending on their size.
When cool enough to handle slice in half and scoop out flesh. For a smooth texture, place all ingredients expect parsley in food processor and blend until smooth. For a coarser texture mash with a potato masher.
If making ahead, turn into a large microwave-safe dish. Mixture will keep well, covered in fridge for up to 2 days. Reheat in microwave on high for 4-6 min., stirring occasionally. Or heat in covered casserole dish in the oven at 350º. Stir often. Serve with a generous sprinkle of parsley.
