1 lb. smelts, cleaned, boned, and opened flat
1 tsp. salt
1/8 tsp. pepper
1/3 c. flour
2 c. packed, soft Italian bread crumbs
2 eggs, beaten
Oil for deep frying
1 lemon, cut into 4-8 wedges

Directions:

Pat smelts dry with paper towels. Sprinkle with salt and pepper.

Dip smelts, one at a time, in the flour to coat both sides and shake them to remove excess.

Dip in beaten eggs and roll in bread crumbs.

Deep-fry the smelts 3 or 4 at a time, turning the gently, until they are crisp and golden on all sides.

Transfer to paper towels to drain. Serve with lemon wedges on a heated platter.
