1 1/2 - 2 lb. beef round or steak
2 T. oil
1/4 c. soy sauce
1 c. chopped onion
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. ginger
4 tomatoes, cut into 8ths or 1 large can stewed tomatoes, cut into pieces
2 large green peppers, cut into strips
1/2 c. cold water
1 T. corn starch
cooked rice or noodles

Directions:
Directions:
Cut beef into strips and brown in oil. Transfer to crock pot and add remaining ingredients, except for the corn starch and 1/2 c. water. Cover and cook for 5-6 hours on low or until meat is tender. Combine the corn starch and water to make a paste and add to the liquid in slow cooker and cook until thickened. Serve with noodles or rice.
