Chicken Lasagna Recipe

3/4 c. butter or margarine
3/4 c. flour
3 c. milk
1 1/2 chicken flavored bouillon cubes (pastillas de caldo de pollo)
1 c. grated Parmesan cheese
2 c. grated Mozzarella cheese
2 c. cooked, diced chicken breast
8 lasagna noodles, cooked (I buy the kind that don’t need to be cooked, “precocidas”)
Broccoli, cooked until tender-crisp, well drained
Can of sliced mushrooms, drained (optional)

Melt margarine in large cooking pot over medium heat. Stir in flour until smooth and bubbly. Remove from heat. Add milk and bouillon cubes. Return to heat and cook, stirring often, until sauce begins to thicken. Remove from heat and stir in Parmesan cheese. Grease 13X9 pan. Spread 1/3 of sauce in bottom of pan. Spread out four lasagna noodles on top of sauce. Sprinkle half of chicken, broccoli and mushrooms over the noodles. Cover with another 1/3 of sauce. Spread four more lasagna noodles on top. Sprinkle remaining chicken, broccoli and mushrooms over noodles. Sprinkle half of the Mozzarella cheese over top. Spread remaining sauce on top, and top with remaining Mozzarella cheese. Bake at 180° C ( 350° F ) for 45 minutes-1 hour.

This recipe is a bit of work, but well worth it as everyone loves it! It’s a great potluck dish.
