1 large or 2 small eggplants
Butter for greasing baking dish
1 stack Saltine crackers
1 cup mushrooms
1 stick butter
1 chopped onion
1 egg for binding mixture

Directions:
Directions:
Remove eggplant skin, cube, and boil for five minutes. Let eggplant cool, then drain and mash.

Microwave mushrooms, butter, and onion. Let cool.

Mix all ingredients, and add 1 egg to bind.

Bake covered at 350 for 30 minutes.
