1/4 c. margarine
1/2 c. sugar
2 eggs, beaten
1/2 c. sifted flour
3/4 c. corn meal (“semola de maiz”, available in Hipercor, Eroski)
1 T. baking powder
3/4 tsp. salt
3/4 c. milk

Directions:
Directions:
Cream margarine and sugar. Add eggs and mix well. Alternately add dry ingredients and milk. Beat thoroughly and quickly. Fill hot, well-greased muffin pans 2/3 full. Bake for 20-25 minutes at 425° F (220° degrees C).
